Made a simple chimichurri marinade and poured it over grilled steak. The brightness hit immediately. Parsley, garlic, red wine vinegar. These things I had cooked with separately forever. Together they became something entirely different. Argentine cooking makes so much sense to me now. Herbs are not garnish. They are the main event.
