Completing the Caribbean Foundations Pack Changed My Understanding

Finished the Caribbean Foundations Discovery Pack and I feel like I actually understand Caribbean cooking for the first time. I have been cooking Caribbean food my whole life but never had the framework. Now I know why allspice matters, what scotch bonnet does that other peppers cannot, and why sofrito is always first.
