I always thought Caribbean and Latin American food were the same thing with the heat level turned up differently. Now I understand they are different worlds. Caribbean heat from scotch bonnet is fruity and floral before it burns. Latin American heat from chipotle and habanero is earthier and smokier. Same category, completely different flavor identity.
