Every BBQ documentary talks about American South BBQ, Korean BBQ, Argentine asado, Brazilian churrasco. Nobody talks about Nigerian suya. But suya is one of the oldest and most complex BBQ traditions in the world. Peanut and pepper dry-rubbed beef over open flame. This needs to be in the BBQ conversation.
