Chimichurri is not the same everywhere — and that is the point

Argentine chimichurri and Colombian chimichurri are genuinely different things. Argentine is parsley-heavy, olive oil, vinegar, red pepper flakes. Colombian versions often include tomato, onion, scallions. Each is correct for its region. This is what regional flavor means — not one version authentic and others wrong.
