Three Days with Berbere Changed My Understanding of Complexity

I tested berbere three ways over three days. Day one added at the start, forty minutes slow cook. Day two added at fifteen minutes. Day three added in the last five minutes. Three completely different dishes. Early addition created a background warmth the fenugreek transformed into something almost meaty. Late addition kept the chili sharp and cardamom bright. Spice timing is as important as spice selection.
