Sofrito Is Architecture, Not Seasoning

The mistake I made for years was treating sofrito like a seasoning added at the end. Reading about the Puerto Rican tradition, I learned it is the first thing built. Cooked in hot oil until the garlic softens and herbs bloom, and everything else is added to it. Sofrito cooked in oil first creates a completely different flavor base. The dish is built on it.
