What Suya Taught Me About West African Seasoning

Every cuisine I had explored before West African cooking used spice to transform a main ingredient. West African suya seasoning does something different. Ground peanut, ginger, dried chili create a crust that caramelizes on the grill and becomes structurally part of the meat. The peanut fat renders into the beef. The ginger and chili become inseparable from the protein.
